Whatnot Brewing will be a small-scale brewery (2.5bbl) that will be located in rapidly growing northwest Omaha, Nebraska. We will provide a quality product and a relaxing atmosphere for the fans of craft beer living in northwest Omaha that currently have to drive many miles across town for the same experience.
Whatnot Brewing has a few key differences that will separate it from other breweries in Omaha. First, we recognize that many of the thirsty people of Northwest Omaha, Elkhorn, and Bennington need a brewery to call their own. Most people prefer to go to establishments within 15 minutes of where they live. A lot of us living in northwest Omaha have to drive much further than that to visit Omaha's breweries.
Second, we will focus on the homebrewing community by inviting homebrewers to brew their own series of beers. This will keep the beers on tap unique and ever changing. While local breweries in Omaha and the surrounding area have a lot of amazing beers, there are many, many more that local homebrewers are currently only able to share with friends and family. Providing them an outlet under contract within our brewery will not only benefit Whatnot, but will allow them to share their craft with the public. We have already secured two well known and respected homebrewers within Omaha and plan to have many more.
As mentioned, each brewer will have their own series. For instance, our head brewer's series will be called "Roshambo Series". This will allow each brewer to gain notoriety for the beers they have created. Each brewer will retain the rights to their recipes so if they start brewing elsewhere, they can take the recipe with them.
Third, we are small and plan to stay that way. Whatnot will be the only nano-brewery in the Omaha metropolitan area. The 2.5 bbl system we recently purchased from our friends at Lazy Horse Brewing will be the heart of our brewery out of the gate. With such a small system, we'll be able to have more homebrewers brewing a larger variety of craft beers.
We do plan to replace the 2.5bbl system a couple years down the line with an all new, shiny, stainless 3bbl to 5bbl system which isn't much of a size increase. Rather than growing to 10bbl or 20bbl, the plan is to open additional locations which will each be 3bbl to 5bbl as well. Imagine having a location like this in Bellevue, Elkhorn, Lincoln, Grand Island, Council Bluffs, etc. Beer brewed at one location could be available at any of the other locations. But first.... let's get the first one open!!
For any beers we need a larger batch of for distribution, we've got a plan for that. Without saying exactly where that is.... where have a lot of other Nebraska breweries brewed at besides their own location? ;-)
We will not be serving food, but we know just how important food is to have at beer establishments. A brewery isn't the only thing currently missing in northwest Omaha. Food trucks are as well! We plan on partnering with multiple food trucks to ensure your hunger is satisfied while we satisfy your thirst. Menus from nearby restaurants will also be readily available.
